What a treat! These remind me of the yummy delights I used to get a quaint British tea shop.
Cream Scones JoyofBaking.com 375 for 15-18 minutes
Scones: 2 c all purpose flour 1/4 c white sugar 2 t baking powder 1/4 t salt 1/3 c cold unsalted butter, cut into small pieces 1 egg, lightly beaten 1 t vanilla 1/2 whipping cream or milk Fake Devonshire Cream: Sugar Vanilla Whipping Cream Beat together with blender. Scones: In a large bowl whisk together flour, sugar, baking powder and salt. Cut the butter into small pieces and blend into flour mixture with a pastry blender. (You can also use the two blades of a blender to mash the butter into the mixture.) In a separate bowl, combine the egg, vanilla and whipping cream. Add this to the flour mixture. Do not over mix! Mix just enough to blend the two mixtures together. Gently knead the dough on a lightly floured surface. Spread the dough out so that the height is about 1 and a half inches high. Then cut the dough into circle with a cookie cutter. Place the scones on a parchment lined cookie sheet. Brush the tops of the scones with cream. Bake until toothpick is inserted and comes out clean. Serve with Devonshire cream and jam. Makes 10 scones; freezes well.
