Over the new year I made some with my friend Amy, but the original recipe wasn't that great. We had to doctor it up a bit...and by the end of it, the granola wasn't as healthy as I would have liked. So I made up my own, based on a couple recipes at Tasty Kitchen.
And it is fabulous. And good for you too...I even figured out the nutritional info.
You must try it today, you'll become addicted too.
4 c oatmeal
1/8 c chopped pecans
1/2 c chopped walnuts
1/2 c coconut, unsweetened
3/4 c brown sugar
1/4 c water
2 t vanilla
1 t cinnamon
dash of salt
Preheat the oven to 250. Line two baking sheets with parchment paper.
Mix the first four ingredients in a large bowl. In a separate bowl, combine the sugar, water, vanilla, and cinnamon; microwave for about 30 seconds and stir. Then pour the liquid over the dry mixture and stir well.
Divide the granola between the two pans; spread the granola out as much as possible.
Bake at 250 for 40 minutes. Stir halfway through.
Let it cool and store in an air tight container. It goes great mixed with yogurt and fruit, as cereal, or by itself. It makes 12, 1/2 cup servings.
*See Courtney's comment for nutritional content. My mind doesn't do math and Courtney's info is probably more accurate than mine was.

I'm still trying to finish off the granola we made over the break, but as soon as I do, I'm going to have to give this one a try!
I made some tonight, but I ended up just slightly over cooking it :-(. Still yummy though. :-)
I also entered it into my food tracking program for the nutritional values and this is what I got per 1/2 cup serving with Flax (I got 13 half cups when I measured it out, so that's what it's based on, not 12).
Cal: 220
Total Fat: 8.2g
Sat Fat: 2g
Sodium: 5.9g
Total Carb: 31.8g
Fiber: 4.4g
Sugars: 13.3g
Protein: 5.9g
Not sure how you figured your nutritional info, but I thought I'd share with you what I got too.
Thanks, yours is probably more accurate. I did mine the hard way with a calculator, pencil, and paper. I must have missed something.

Now that I'm doing weight watchers, I ran this through the recipe builder to figure out points. Thought I'd share in case anyone ever wonders. As posted the nutrition per serving figured at 12 servings is 5 Pointsplus per serving. But lowering the brown sugar down to 1/2 a cup I got it to 4 pointsplus per serving.
